And the cupcakes continue

My Corona cupcakes went down so well that I was experimenting in the kitchen again within a week!


I'm really loving the idea of boozy flavours so to continue with that theme and on raiding my drinks cabinet (ok so the fridge and a box at the back of the cupboard under the stairs!!) I decided to try Baileys this time and boy am I glad I did!!

Makes 12 large cupcakes                           
250g flour, sifted
1/2 tbsp baking powder                                 
100g room temperature olive spread
1 1/2 tbsp sunflower oil
100g light brown sugar
100g caster sugar
2 eggs (room temperature)
120mls chilled Baileys
2 tbsp milk




Pre-heat the oven to 180 degrees
Mix flour and baking powder in a bowl and put to one side
Beat olive spread and sugar until light and fluffy
Beat in eggs one at a time
Add 1/3 flour mix then 1/2 chilled Baileys, 1/3 flour mix, 1/2 chilled Baileys, oil and milk then last 1/3 flour mix and mix until fully combined
Spoon into your cupcake cases and bake in the middle of the oven for aprox 18-20 mins or until a cocktail stick comes out clean
Allow to cool completely before frosting


Frosting:
100g unsalted butter
300g icing sugar
1/2 tsp coffee essence
2 tsp chilled Bailieys


Dice the butter, add the Bailieys and coffee essence then combine with a spatula
Add icing sugar a bit at a time

I only took 6 of these cupcakes into work and gave some to friends when they called in for coffee, they went down so well that every one who got a taste commented that I should leave work and start making cupcakes for a living...if only it were that easy, LOL!!!

Delightfully light boozy summer cupcakes

Boozy summer cupcakes...??  Nom nom nom yes please!



We're really not very big drinkers here, but there is nothing better than cracking open an ice cold Corona on a hot summers day!

Like most days, I was feeling cupcakey but I wanted something other than my now signature caramel flavour (I can't remember the last time I made a different one!!).  So I went scouring through my cupboards and fridge and spotted a few bottles of Corona and remembered a Cinco de Mayo cupcake recipe I'd pinned a while ago which used Corona as a flavouring!!

As usual, it was nearly midnight by the time I'd decided I was going to start baking so rather than working with a new recipe I decided to adapt my favorite cupcake recipe to incorporate the Corona and combine it with a light lime frosting...this is what I did:

Makes 16 large cupcakes                          
250g flour, sifted
1/2 tbsp baking powder                                
100g room temperature olive spread
1 1/2 tbsp sunflower oil
200g caster sugar
2 eggs (room temperature)
240mls chilled Corona
2 tbsp milk
1 tsp lime zest

Pre-heat the oven to 180 degrees
Mix flour, baking powder and lime zest in a bowl and put to one side
Beat olive spread and sugar until light and fluffy
Beat in eggs one at a time
Add 1/3 flour mix then 1/2 chilled Corona, 1/3 flour mix, 1/2 chilled Corona, oil and milk then last 1/3 flour mix and mix until fully combined
Spoon into your cupcake cases and bake in the middle of the oven for aprox 18-20 mins or until a cocktail stick comes out clean
Cool completely before frosting


Frosting:
70g unsalted butter
190g icing sugar
1 tsp lime zest
2 tsp fresh squeezed lime juice
2-3 drops green food colouring (I only wanted a hint of green)

Dice the butter and soften with a spatula
Add food colouring, lime juice and zest and beat into butter until fully combined
Add icing sugar a bit at a time



When the cakes are ready, I usually turn the oven off and leave the cakes for a further 3 mins or so to make sure they don't drop - especially if it's a particularly wet recipe like this one!

Well goodness me they are simply delish!!  Using olive spread instead of butter and a really good drizzle of oil really seems to give a moister crumb - I used sunflower oil as it's what I had in my cupboard but any oil will do as long as it doesn't have a strong flavour.  As for the lime frosting...OMG it tastes like green Starburst so I've already found inspiration for my next new flavour!!!!!

Best Teacher gifts the Leighland way

I've been working loads of overtime (still trying to pay my credit card bill off from Egpyt!!) and have had a very poorly lil Monster to take care of so time has been pretty restricted recently to say the least!

There's light at the end of the tunnel though, there's been no more vomiting since 8am this morning (It's now nearly 2am - oh the joys of working a late shift!!) so if she can make it through another 6 hours she'll be allowed back to nursery school!  She's desperate to get back, especially because not only is she leaving nursery to move on to reception class but her nursery teacher is leaving the school so she's desperate to see her teacher before she goes!

With only a matter of days left, it means some serious last minute gift giving...so what do you do when you need to 2 last minute gifts and are already over your monthly budget?!  Well I'm pretty sure I got the idea from this Pintrest pin but couldn't really think of anything to write (and didn't really have time either if I'm honest) so I googled how to make a shape with words and found this amazing website!

All you need to do is fill in 1 of the 6 fields, chose your shape and direction for the words, pick a font and a theme then click submit and et voila!!  You can even edit the font, colours and themes before saving your final image!

Once I had my image, I opened a word document and pasted it in the middle.  I cropped the image to remove the copywrite border then added a couple of text boxes to make the document a bit more personal.  I had chosen the Duality font when creating my shape so for continuity, I downloaded the same font here for free and this is what I ended up with:


I'll nip to Ikea tomorrow and pick up 2 of their Ribba frames and there you go...a cheap personalised gift for both the teacher and her TA (and yes...I remembered to change the name on the TA's picture!

Preperation in Leighland...

So there's only a matter of weeks left before the schools close for the summer...and until the 'Lil Monster graduates from Nursery eeeeeeeeeeeeekkkk!!!!!  I can not believe my teeny tiny baby is preparing to start school!  Where have the last 4 1/2 years gone?!

While sadly, I did not marry a rich man and so need to work to help pay the bills, bills oh and er...more bills....I am lucky that my sucky job allows me to work evenings so I get to be a stay at homeish mummy (yep, only in Leighland!!)  While I can not wait to have a whole entire 6 weeks one on one time with my Monster, I'm dreading the expense of keeping her entertained for so long!! I'm also dreading the seperation anxiety that will come at the end of those 6 weeks - especially when it sinks in that she's not just going to be away from me every afternoon, but that we'll be apart all day!!

So what can I do to both keep her entertained all day and prepare her for full time school??

Well, I'm arming myself with an arsenal of mostly free summer activities and school prepping exercises.  In the run up to the holidays I'm going to get the 'Lil Monster to help me make a diary which we will use to know what activity we will be doing on which days.  As usual I've been pinning away like mad and keep coming across free printables for meal planning and monthly calanders etc so I decided to make my own A5 sized daily planning printables  - which can be downloaded here should you wish to use them - then we're going to fill each day with 1 or 2 of the activities, at least 1 school prep activity and as the 'Lil Monster is the worlds fussiest eater and going to be staying for packed lunches, I'm going to start introducing her to nice healthy snacks etc...

I've started buying bits & pieces of coloured paper, sticky letters, googly eyes etc and Key Stage 1 work books etc so we'll have quite a bit of stuff to mess about with on rainy days!

I'll be starting Halloween & Christmas preparations soon - maybe even a garden party towards the end of the summer if we get nice enough weather so watch out for my handy hints, tips and printables coming soon!

How to make the best EVER Caramel Cupcakes!!!

Ok, so maybe second best ever....


On Wednesday, the 'Lil Monster wanted to bake cakes.  To save time and mess I usually use a boxed cake mix when baking with her and I had a Betty Crocker Caramel Cupcake box, so we whipped them up and boy were they good!!!

I'e never really experimented with flavours before, I usually stick to either chocolate or vanilla but the caramel flavour inspired me to find a way to make them from scratch and I'm soooooooo pleased that I did!

I'm not a big fan of fruit so I usually have a squeezey bottle of Sainsburys own toffee sauce in the cupboard.  Drizzle that over sliced apple and/or banana and there's not enough fruit in the world...it tastes amazing but more importantly not too sickly, so I knew it would make a perfect substitution for vanilla in my go to cupcake recipe!

Basic cupcake recipe:

Makes 16 large cupcakes                            
250g flour
1/2 tbsp baking powder                                
100g olive spread (room temperature)
1 1/2 tbsp sunflower oil
200g light brown sugar
2 eggs (room temperature)
100mls almond or hazelnut milk
3tbsp toffee/caramel sauce

Pre-heat the oven to 180 degrees
Mix flour, baking powder and sea salt in a bowl and put to one side
Beat olive spread, sugar and caramel sauce until light and fluffy
Beat in eggs one at a time
Add 1/3 flour mix then 1/2 milk, 1/3 flour mix, 1/2 milk and last 1/3 flour mix and mix until fully combined
Spoon into your cupcake cases and bake in the middle of the oven for aprox 16 mins or until a cocktail stick comes out clean
Completely before frosting

Once the cakes are ready, I prefer to turn the oven off and leave the cakes in for a further 3 mins to ensure they don't drop.

Frosting:
75g unsalted butter
175g icing sugar
2 tbsp caramel sauce

Dice the butter and soften with a spatula
Add caramel sauce and beat into butter until fully combined
Add icing sugar a bit at a time

Death and Distruction the Leighland way...

Yep, I'm sorry to say that while away on holiday, I was responsible for a death.
R.I.P. my dear digital camera.  You captured many beloved memories during out time together and you will be sadly missed!

Luckily I was able to salvage the memory card!

So we've just not long since gotten home from 2 weeks in Nabq Bay, Egypt :'-(
Nabq Bay is a short drive from Sharm El Sheik airport, just beyond Sharks Bay and like both Sharm and Sharks bay is a town built solely for the tourist industry.


We were going there to celebrate our 10th wedding anniversary!  We were planning to roll the celebration, the 'Lil Monsters first international holiday and some scuba diving into one holiday and celebrated our 9th wedding anniversary by booking it!  As our anniversary falls in May, it was booked before my accident last August so we weren't actually able to go diving, but we still had a blast!

We knew the 5* Jaz Mirabel Beach resort would be 100% perfect as we'd been before.  The last time we were there was New Years 2007/08.  As it was winter, we only ventured to the beach once for about 30mins, it was really windy and the coral sand kind of sandblasted you so we knew to avoid it from then on!  It's a shame too as when we went this time, in May 2013, we expected to walk in to the sea from the beach and snorkel.

When you're walking out you are straight on top of a coral reef which stretches about 1 1/2 miles out to sea.  The majority of the top of the reef is clear enough to walk on without causing damage and the sea is only really deep enough to tickle your bum!

Here you can see the 'Lil Monster watching waves crash over the edge of the reef on the horizon!
  There's not as much to see in this part as there are when walking in from Sharks Bay, or Taba (Northern Sinai Peninsula) but we met  puffer fish, lots of sea porcupine and even a sea snake!! 






The sad part, is that on one of the days that I walked out towards the end of the reef, my Dad and I came across a fishing net about 100yrds long.  We hadn't seen it before and didn't see it again and no one was able to tell us anything about it so we don't know if it had washed up or if it was there intentionally, but it was gone the next time we walked out.  Dad and I were able to rescue a pair of beautiful yellow Angel fish!  Unfortunately, the fish had sharp spines in their dorsal fins and the shock of a prick made me drop and kill my camera :-(

What I've learned so far....

Well, we're over a quarter of the way into 2013 and I thought now might be a good time to reflect on what I've learned on my journey into frugality and organisation....

Er....not a lot to be honest!!

I'm still paying off a debt on my Mum's credit card - we usually take part in a Christmas savings club though His Lordships work, but they decided not to offer it last year.  We decided to just save the money ourselves, but as we had easy access, we dipped into it a little too often so there wasn't much left by the time we needed it for Christmas shopping!




We're still in a better financial position now compared to January and it kinda goes hand in hand with the weight part of my New Year resolutions...4 weeks ago, I dared to get on the scales and was devastated to find that I weighed more than ever!  In sheer desperation  I decided the only thing to do was start a meal replacement diet.  4 weeks on, I've spent a total of £130 on 6 weeks worth of porridge and shakes - thats £21pw and our weekly shopping bill is down from £50 - £60pw to around £20 - £25pw and better yet, I've lost a total of 20lbs!!!

As for making 1 dream a reality - I've decided on the dream, but its an expensive one so goodness only knows when I'm going to be able to start trying to make it happen!  One of my hobbies is making natural body lotions and potions and I would love nothing more than to start selling my concoctions on Etsy, but it all takes money!!  I would need to get certified and insured and although it's ok to prepare skincare products in the same kitchen that you prepare food in - it's not ok to use the same tools so I'd need to buy all new pots, pans, utensils etc then I'd need to buy ingredients and finally I'd need packaging.  I reckon at least £1,500 - £2,00 which I just don't have!

I have recently been referred to the Chronic Pain Clinic and one of the pain management techniques they use is teaching you you to pace yourself.  To do this, you need to make a plan.  you need to list the jobs that need doing then you break them into manageable segments allowing significant breaks through out.  In case you hadn't noticed, that's the organisational part of my New Year Resolutions taken care off....haha, ok so it would be a little more accurate to say that I have started to organise my day and hopefully it will make my life easier!!!!

To tan or not to tan....

My parents would take my brother and I to Majorca almost every summer when growing up.  I had a healthy olive skin tone, I used to go really dark and never got sunburned.  My healthy glow would last for months on end before fading....

...Fast forward nearly 20 years...

His Lordship and I would save for the best part of 2 years to pay for glorious holidays a little further afield and our last proper holiday was to Egypt a little over 5 years ago, before the 'Lil Monster came along.

British summer time in not quite in the same league as foreign holidays and I tend to burn at the first hint of summer these days, so I'm a little anxious at the fact that we're heading back to Egypt in a little over a month.  We booked the holiday to celebrate our 10th wedding anniversary, so I really don't want to be looking like a lobster on the beach and in photos, so I was contemplating using a sunbed for a few weeks in the run up to going away.   

I'm still over my ideal weight and all ladies know that a tan make you appear slightly slimmer and can help disguise cellulite.  I'm sure many people reading this would tell me to go for a spray tan, but I've heard that using a sunbed before a holiday can help to prevent sunburn...given the choice of a patchy spray tan that looks even patchier when wearing off, or a healthy looking all over glow from a sunbed - I'd choose sunbeds every time...

Like many ladies, I used sunbeds most days when I was younger, before we really understood the dangers of such frequent use.  I'm lucky enough to have only 2 wrinkles and usually pass for a good few years younger than I really am and as I'm only thinking about having a handful of sessions, I'm not too worried about the aging effects, but how much damage can a handful of sessions actually cause?  Can they really help to protect against sunburn or is that an urban myth??  How do you tan safely??

Giant cupcakes? Mmmm, yes please!!

So today is school allocation day...eeeeeeeekkkk!!!!!

I'm desperately trying to take my mind off the agonising wait for the email that will tell my if my 'Lil Monster has gotten into the good school or the bad school and I remembered that I was going to post the recipe for the giant cupcake I made for easter!!

My baking history is not the best, I love making cakes and I love decorating them, but I'm really a bit rubbish at it as you can see below!


The first cake was originally a 2 tier Monster High inspired 3rd birthday cake.  It was my first ever attempt at both a 2 tier and at covering cakes with fondant icing!  As you can just about make out from the picture the icing is rather lumpy and bumpy, especially around the edges and the other pic is of cakes I made for Mothers Day last year - also pretty shoddy!!

So I figured a giant cupcake was biting off more than I could chew...literally, but hey...what the heck?  Who would have thought it would turn out as well as it did?!  I know the piping is less than perfect, but for a first attempt.....

And not only did it look great, it tasted great too!! The recipe I followed was for a red velvet cake, but as my mum doesn't eat cocoa, so after a little switcheroo, I made a pink velvet cake instead...YUM!!

So here it is

For the cake                                                     For the butter cream
125g butter                                                       150g unsalted butter
325g castor sugar                                              450g icing sugar2
2 eggs
1-2tsp vanilla extract
red food colouring paste
25g cocoa
325g fine cake flour
1tsp bicarb soda
284mls buttermilk*
1tbsp  vinegar
Raspberry jam 

*I didn't actually have buttermilk, so I used the same volume of full fat milk, squeezed 1/4 fresh lemon into it and let it sit for 10 mins

preheat the oven to 180c/350f/gas mark 4.  Prepare both cake pans, you can do this with a light covering of spray oil or flour.

Soften the butter (I usually stick mine in the microwave  on a low to medium setting and check it every 20-30s) then cream with the sugar.  There is a lot more sugar in this recipe compared to butter, so you really need to work it.  I mix by hand - its a great way to tone up your arms!!  Once you've got it nice and fluffy, beat in the eggs a little at a time.

If you want a cocoa bases red velvet cake, take the cocoa, vanilla and food colouring and mix in a separate bowl.  If you want to make a cocoa free pink velvet cake, switch out the cocoa for 25g of flour.  Once your mix is smooth, blend it into the butter and sugar mixture until it is fully incorporated.

Sift the flour, salt and bicarb together then alternate between adding small amounts of the flour mix and small amounts of buttermilk into the mixture and stir well. Then add the vinegar.

Separate the mixture between the pans, allowing plenty of room for rising and bake for 40-50 mins.  You will know they are ready when you can insert a skewer or long sharp knife into the middle of the cake and it comes out clean.

Once the cakes have fully cooled, beat the butter in a bowl and slowly add in the icing sugar.  Turn the cakes out and level off, then stick together with the jam.  To pipe the roses, put either a D2 nozzle or large star nozzle into the piping bag and add the icing,  Twist the empty end of the bag to remove air and with a firm, but not hard pressure, start piping in circles to get the rose effect and copy all the way round the cake until the top half is covered et voila!!!!

And there you have it!  Now you too can make a special occasion giant cupcake!!

4 year old with Shingles! :-(


Aw,   my poor 'Lil Monster took ill last year in the second week of  the Easter holidays.  She was absolutely covered, from head to foot and miserable as hell : - (
Fast forward a year - here we are at the heading into the second week of the Easter holidays 2013 and guess what...? Shingles!!!


When the chicken pox struck, we found an anti itch cream called Eurax and a 2.5ml dose of Piriton for kids an absolute godsend!  Seriously, they say the average kid gets about 150-200 spots.  My eldest neice got 5 spots. Her younger brother and sister - the twins - aka the Horrors, had about 10 each...I gave up counting after finding 125 just on 1 side of my 'lil Monster's face!!

Wow, I can't believe she still had a didi just after turning 3!!  I guess the Didi Fairy is a story for another time!!

I didn't even think a 4 year old could get shingles!

I noticed a small cluster of bumps just below her left armpit on Thursday morning.  She's had mild eczema since birth and this often presents as a dry, lumpy and bumpy rash so at first I thought she was having a worse break out than normal.  I took a few photos yesterday as it looked a little worse and there were a few more bumps.  By this morning, they had all blistered.

Fortunately, she's not in any pain at the moment, shingles is caused by the same virus as chicken pox  - although the chicken pox heals and goes away, the virus remains, laying dormant in the nervous system for the rest of your life.  Most people have no further problems once the chicken pox has gone, but some will have a flare up of shingles.  Its pretty uncommon in kids, especially such a young 'un but the good news is that at this age, its usually pretty mild which in turn means less chance of complications - all of the literature and people I have spoken to today recommend seeking medical attention.

As you can see, she hasn't really got that many spots so I'm hoping it's going to be super mild and that slight discomfort or itching is the worst it's going to get.  My biggest worry at the moment is that like most kids when they're ill, she wants Mummy rather than Daddy.  Poorly kids always seem to be at their worst at the end of the day as they're getting irritable and over tired, but of course it's the weekend now and I'm going to be at work til at least midnight for the next 2 nights.  I don't know if I'm more worried for my bubs who will have to deal with Daddy instead of Mummy, or for His Lordship who has to deal with a poorly lil bubs who just wants her Mummy!

I've got Eurax cream, Piriton for kids and of course Calpol - so we're armed and dangerous to any virus that wishes to cross us so wish us luck!

Moral dilemma- Most of us know that the older you are when you have these illnesses, the worse it is and the higher the chance of complications - so is it kind or cruel to intentionally expose your child to the virus??  Some parents keep their infected offspring in isolation while others hold Pox Parties and invite every kid they know....I'd really love to hear you're chicken pox and shingles stories and you're opinions on the question posed...

Who else would make an awesome beach dress when its still snowing outside...??!

Yep, that's right...I would!!  And probably anyone else that's going on their jollies soon no doubt!!

Wow, long time no post!  Well I've been busy, busy, busy, but not really doing much if you know what I mean?!  So what have I been up to....?  Well, we've just about finished the spare room.  I know, I know, no one else in the world takes as long to decorate as we do!  We find it really hard to fit all of the work in around His Lordships shifts and mine (if I was daft enough to leave him unsupervised, he would get it wrong and just have to do it all again) but it's getting there!  The painting is finished and both wardrobes are up, I just need to buy bottom sheets for the bed and then dress the room then it's done.

We've also had Easter.  I spring clean my house in the lead up to Easter Sunday every year as the whole family come for Easter tea.  Fortunately, His Lordship was off work for most of the bank holiday weekend so he was able to help as I still can't manage to do much :-(  I did however manage this for my first ever attempt at a pink velvet giant cupcake...

The recipe for which will be posted soon...


So back to beach dresses...Yep, its only a matter of weeks til we jet off to Egypt for 2 lovely weeks of R&R!  This will be our first proper holiday in over 5 years and the 'Lil Monsters first ever proper holiday so we're all really excited!!
Thanks to being obscenely broke (and still paying the holiday off on Mummy's credit card....EEEK!!) I can't really afford to buy much by way of clothes, but of course need pretty much everything for all 3 of us!  This week, I've been concentrating on beach wear and came across this awesome tutorial from Brit + co on Pintrest for a handmade beach dress.  Though I fully intend to make myself one, it will be black so probably won't photograph well for this post, so I decided to alter the instructions slightly and make the 'Lil Monsters first!


What you'll need:
Fabric
Sewing machine or needle & thread

First of all, I bought some really cool fabric from a shop on eBay.  It was £3.99 per meter and 112cms wide


I wrapped it around the little 'un to find the width that I wanted, then lay it flat on the dining table and cut.  As she's only recently turned 4, cutting it in half length-ways gave the perfect length!

This is quite a fine, soft, stretchy fabric so in order to cut straight, I laid the fabric out on the dining table and used the groove where the 2 ends join in the middle (its an extending table) and just supported the fabric with a very light tension.

I then cut an inch wide strip from one of the off cuts, then cut it in half to make the straps.


Next, you simply turn on of the corners in to make a triangle, and stitch along about 1/2 or 3/4 of an inch in and then trim the excess material


I fed a pipe cleaner through the tube and secured it to the end of the first strap, which I had already put a couple of stitches in.  I then pulled the pipe cleaner and strap back through the tube, stitched the strap together at both ends then tucked the ends inside the tube like so



Repeat with the corner on the opposite side, et viola!  Its ready to wear!!  Simply put the right strap over your right shoulder with the rest of the dress in front of you, wrap it all the way around you then slip the left strap over your left shoulder and there you have it, a beautify wrap over beach dress!!  (Its only just occurred to me that I should have taken pics of how to put it on as that probably sounds a lot more complicated than it actually is!!  I'll prob update the post in the next few days with pics but in the meant time Britt + Co were clever enough to include photographic instructions lol!!)


As you can see, my 'Lil Monster loves her new beach dress!  And I have enough fabric left over to make a hair band or head scarf to go with this dress and maybe even some other style of dress!

There's a reason I named my blog Life...in Leighland

Yea....guess which numpty forgot to take before pics of the spare room?!  Oh yes, that's right....I did!!

So here's a half way through!



And wouldn't you know it, I bought the smallest size can of expanding foam with a view to minimising waste and of course in true Leighland style...didn't have enough!!  His Lordship has a rather ingenious idea though - rather than just removing the excess cured foam and binning it, he cut it into slices then pushed it into the few gaps that weren't filled!

So here's what we did:

  • Vacuum floor to remove any debris
  • Rub the gaps over with white vinegar
  • Immediately fill gaps with expanding foam 
  • Leave foam to cure for aprox 4hrs
  • Remove excess cured foam with the Worlds Sharpest Knife
  • Slice excess cured foam to fill further gaps
  • Lightly sand over filled gaps and other unsightly lumps & bumps
  • Vacuum (about 10 times!!) to remove as much dust as possible
  • Rub entire floor over with rags and white vinegar to remove 
  • Starting in the farthest corner, open paint can and start to paint
  • Paint half of the floor then leave to dry
The white vinegar helps to remove dirt/dust and the foam adheres to damp surfaces better than it does to dry surfaces.  









I would definitely recommend using an expanding foam for a job like this. The gap you can see here is actually 1"x6" so I really don't know what else could have done the job - a normal wood filler would have just fallen into the hole and landed on top of the living room ceiling!







So why did we only paint half of the floor??  Because the guest bed is still in there!!  We will move the bed to the painted side of the room tomorrow and finish the first coat off then.

I can't say at this point if I would recommend using the floor paint as we only have half a coat on but my initial thoughts are that if you're going for a vintage French/ shabby chic look, you can get it with only 1 coat.  I love that look but the furniture I have and the colours on the walls are a little too modern to pull it off so hopefully 2 coats will give enough coverage as the paint is not cheap - Ronseal claim 12m2 coverage per 1l and I bought 1.5l for £30 or so at my local Homebase.




I'll post more pictures as we get the room finished off and the new wardrobes arrive - or at least I will if his Lordship and I don't kill each other while assembling them, lol!!!

Floor painting in Leighland...

So we've eventually cleared out the spare room (in a vain bid to get the New Years resolutions back on track!!).  As the home made built in wardrobes that we inherited when we bought the house have been ripped out, there'd be a gap in the floor where the carpet ends and the new free standing wardrobes will sit, so up came the carpets!

Unfortunately, our budget can't stretch to a new carpet so the plan is to paint the floor boards white and move the rug from the dining room up stairs!

Some of the discs in the bottom of my spine are damaged so when it comes to DIY (which I love!) I'm always looking for a good cheat that will help me finish the project in half the time while still giving a perfect-ish finish - Ronseal recommend sealing knots and filling cracks with their appropriate sealers and fillers, I'll be using Homebases' own Expanding Foam instead.  They also recommend using a sanding machine to remove any previous finishes.  I can't afford a sanding machine and certainly couldn't manage to sand by hand but to the best of my knowledge the floor boards haven't been treated since they were put in around 100 years ago so I'm going to give the boards a good wipe down with white vinegar before I start painting.

I don't know how well my cheats will turn out so its a good job its the spare room!!  I'll be posting pictures soon so you can see how we get on!  Share you're DIY tales and hints & tips below!

9-5...what a way to make a living

Good god, what in the world did I do wrong in order for me to be punished with a few weeks of working normal, full time, day time hours?!?!?!

Yep, the bosses must have decided the training team weren't earning their keep so had them write up a training course then start delivering it through out the company and I got switched into this group at the last minute.

Seriously, regular mummies need a medal for being able to get up, get ready and get their lil' peeps ready then dropped off and still be in the office by 9am.

Hats off to ya!!!

The lil' lady and I usually wake around 8.30 - or at least I wake up then to find her tickling my toes!!  Then we have a snuggle in bed while watching half an hour or so of kids TV and talking about what we're going to do for the day.  We usually get breakfast around 9.30, normally hit the shower an hour or so after that, drop Loals at nursery for 12.30 and on the days I have to work., I rock in around 4pm....but noooo...not these last few weeks...Instead, I've had to be up with the crack of dawn (6.30am!!), I've had to get ready super quickly, get Loals ready super quickly, cart her off to her grandparents then start work at 9am!!

I'm soooo pleased to be on a weeks break before going back to a. work and b. my usually midders hours (midnight hours)!!!

I think the hardest part has been being away from my baby, I've missed her loads and loads and the best thing is that I've actually started sleeping again!!  Not just sleeping, but going to bed and more or less straight to sleep at a humane hour!!

So, moral of the storey??  Don't agree to training courses - unless the pay is just tooooooo god damned good for full time, oh...and time for bed!!!!

As a working parent, how do you cope with it all?  Do you work unsociable hours??  How do you cope with childcare and staying awake??  Speaking of which...I've dosed off a fair few times while writing this, so good night for now!! <3

The Most Terrifying of Night Terrors.....Ever Wanted To Go Into The Light????

OMG!!!!!  Please, please comment on this post if you have any experience, advice, thoughts.....

Well, I've been experimenting with more mug cakes this week - chocolate brownie mug cakes to be precise but in typical Leighland fashion, my phone was on charge while I was playing in the kitchen so I couldn't take any photos.  This is not necessarily a bad thing though as they looked delicious and tasted delicious...to begin with!  About 3/4 of the way in we decided one more bite would make us sick!!  It's not like me or the B to put a desert down but there was no way we could finish it!

So I was sitting here trying to think of something interesting to write about instead, when all of a sudden the dreaded screaming began.  We usually encounter these episodes 2-3 times a month, but this is the second night in a row!!



For the benefit of anyone who has never witnessed an attack, it is truly one of the most terrifying things you will ever see.  It's not uncommon for your child to sit bolt upright and point at something only they can 'see' while screaming and thrashing around.  Often, they do not recognise you and any attempts to soothe them will usually make the attack worse.  You feel like the worst parent in the world and it is hideous.


Lola is quite the little Mummy's girl, when ever she is poorly, upset or if her sleep is disturbed for any other reason, she only wants me.  Although she usually wants Daddy in the room, she will generally want to snuggle into me.  When attacks strike, she lays on her back, eyes wide open, pointing at something near the ceiling with both arms and both legs, screaming bloody murder.  I'm never sure if she knows its me or not, but she screams for me to get off her, leave her alone and go away.  She screams and screams for Daddy, but often when he gets she won't let him near her either:-(

Last night, I made a conscious effort not to touch her or soothe her in anyway shape of form.  It seemed to do the trick, because I wasn't interfering,  I wasn't making anything worse.  I was eventually able to decipher some of the screams and what I heard shook me to my core.

Anyone who has ever witnessed a night terror is sure to have Googled it.  They are also sure to have not been brought much comfort from the fact that their little loved one is blissfully unaware that anything is even happening and there is very rarely anything to worry about.  In fact, the biggest danger with a night terror is that the child may hurt themselves with all of the thrashing about.  This is something I have grown accustomed to.  While Lola has never actually hurt herself, I often get kicked or hit in the face and chest and we recently had to drill into her bed and bolt it back together after if eventually gave up the fight and fell to bits!

During last nights attack, I was able to make out that Lola was upset about not being able to go somewhere. This struck me as a little odd as night terrors occur shortly before you begin dreaming.  This is how a night terror differs from a nightmare.  Nightmares happen during the dream phase, also known as REM sleep.  A child suffering from nightmares will generally wake up distressed as a result of their bad dream and depending on age, they are able to describe the dream whereas with a night terror, there is no dream so there is nothing to recollect.  So why was Lola talking about going somewhere?  Using a slightly louder and firmer voice than is normal for me, I asked her.  It took a few goes, but she eventually told me she wanted to go 'into the light'.

As soon as she said it (ok, screamed it!) all I could think of was when people talk about Near Death Experiences and they describe dead loved ones coming to take them into the light.  I panicked and told her 'No, you can not go into the light, you have to stay here with Mummy'.  She did not like this at all and quickly became more distressed.  As usual, she wanted me to get of, leave her alone and go away.  She hysterically screaming that she wanted to go with 'them' because 'I like it'.  I couldn't get her to say who 'they' were but eventually managed to distract her by asking her to say with Daddy.  She began screaming for Daddy, as she typically does in these situations, and seemed to quickly forget about 'the light'.  By the time Daddy got to her room she had pretty much settled down again into a deep sleep.  We heard the occasional whimper through out the rest of the night, but every time I checked on her she was sound asleep.

I'm sure there'll be a really good forum out there for families who are affected by night terrors, but so far I haven't been able to find it.  With the exception of my best friend, who witnessed one of Lola's attacks during a weekend away, none of our friends or family have experienced anything like this before.  Lola had her 4 year checks a few weeks ago and the health visitor was unable to offer any kind of advice at all so right now, the B and I are feeling completely alone in this.  The only saving grace is that Lola has no idea anything is even happening.  The worst part is that if Google tells us there are no dreams involved in night terrors, then I have no idea how normal (or abnormal!!!!!!) it is for Lola to want to go 'into the light'.  I don't know how worried to be about it!!!   I feel like the worst mother in the world :'-(

Fortunately, tonight's attack was pretty calm in comparison - to the extent that at first I thought she was having an attack of growing pains (oh yes, night time in our house is fuuuuuuuuunnnn!!!!).

Apparently only about 6% of children are affected by night terrors, is your kid one of them??  How do you cope?

Mmmmmore mug cakes for muggins!

Yep, I definitely think I'm on a roll with these mug cakes!!

A recipe caught my eye just after the chocolate chip cookie mug cakes, cake batter ice cream from the delightful Chocolate Covered Katie.  Not only is it cake batter flavour, but its a teeny tiny 40 kcals per serving!!!!!!!!  Well holy cow, I had to have a go of that right?!

Well, only in Leighland could I think something like this would work for me.  As nomlicious as it looks in Katie's photos, I didn't turn out quite the same for me :-(  I've decided it's down to the rather expensive gadget she uses, the vita-mix.  I blended by hand and instead of this:

But the idea for cake batter flavoured yumminess was stuck in my head so I did the one thing I do best...I scoured pintrest for more recipes!!  

After a few more typical Leighland attempts, I struck gold!!  I found a recipe for funfetti mug cake from Wendy See Wendy Do.  I made 2 small changes with the ingredients et voila...

Ingredients:

2 tbsp plain flour
1 1/2 tbsp sugar
1/4 tsp baking powder
2 tbsp almond milk 
3/4 tbsp coconut oil (melted in the micro first)
2 drops vanilla extract
pinch of salt
sprinkle of sprinkles!!


All you need to do to master this delicious, light and fluffy sponge is mix all of your dry ingredients (except the sprinkles!) in your mug, then add the wet ingredients, stir with a fork until its nicely mixed then just as you're about to bung it in the microwave mix in the sprinkles and off you go on high for 70-80 seconds (850w)

I halved all of the quantities from Wendy's recipe and changed the milk out for almond milk and the oil for coconut oil that I melted in the microwave first. Almond milk really helps to enhance the 'cake' flavour and the Alpro almond milk that I is 48 kcals per 200mls and has 2.2g fat where as the full fat milk I used to use has 128 kcals per 200mls and 7.2g fat!!!  And the health benefits from coconut oil deserve a blog post all of their own! 

The only thing the cake is really missing is a bad boy topping so tell me, what would you finish it off with?

Mug cakes?? I must have died and gone to heaven!!

What a week!!

So the diet hasn't gone to plan - I've started physio again, am on more new tablets and basically in need of some serious cheering up.

I'd normally just bake a cake, but a big cake between 2 means eating 1/2 a cake in a very short space of time :-(  So I started thinking about how the Hubs has maintained his recent weight loss with portion control. I was of course, browsing Pintrest while I was thinking about it and by some strange twist of fate, I almost immediately came across a 'mug cake' recipe!!  I then searched 'mug cake' and just about fell into desert heaven!!

I scrolled through a few different recipes until I found one from Sophie at My Happy Place.

Ingredients
1/4 cup plain flour
1 tbsp white granulated sugar
1bg tbsp brown sugar
25g melted butter
1 egg yolk
1 1/2 tbsp chocolate chips
few drops of vanilla extract.

The original recipe calls for 15g melted butter but I found the mix to be to crumbly so added another 10g to get it right.

Melt the butter in the microwave (20sec should be enough, then swill the mug for a few more seconds until the rest of the butter has melted) then add a few drops of vanilla extract.  Stir in the 2 sugars with a fork and add the egg yolk.  I mixed the chocolate chips with my flour then added them to the mix. (this is where I found the mix to be too dry and added the extra butter).  Nuke in the microwave for 40-120 seconds (the time will vary depending on the power of your microwave, mine is 850 and I needed just under 120 secs)....et voila...Single serving Chocolate Chip Cookie in a Mug!!!  


Amazing!!  The cake was soooooooo yummy, I can't wait to find and try out more 1 portion deserts recipes tomorrow

Moral of the story - while still using full fat/calorie ingredients, a 1 portion mix is exactly that - 1 portion - so that's all you eat as opposed to having a full cake or biscuit batch that can't possibly be thrown away....GENIUS!!!!

A weight on my mind...

Ok, so my GP weighed me today....

After getting over the urge to throw myself off the nearest tall building, I have to decided I'm going to try  The Fast Diet.  I'm sure most of you will know what this is, but for those of you who have been living under a rock (or in Leighland!!) and have no idea what it is - you 'fast' for 2 non-consecutive days and eat what ever you like for the other 5.  It promises not only weight loss,  but can help reduce high cholesterol, increase brain function and even help defend against cancer!  It's not fasting in the traditional sense - rather than 24hrs without food, it recommends women take 500 kcals and men take 600 kcals and wait 12 hours between eating.  While I'm incredibly skeptical, it doesn't cost anything so has got to be worth a try!

Now for the part that makes me feel sick...I'm publishing my weight and measurements for the world to see *gulp* the only other person on the planet who knows what I weigh is my GP.  No one else knows my measurements and this is very, very hard for me to do.  I have asked my other half to take some 'before' pics but as yet have not had the guts (no pun intended!!) to strip to my undercrackers in front of a camera :-(

Day 1:
Weight - 15st 7lbs
Waist - 41"
Hips - 49"
Under bust - 40"
Upper arm - 16"
Thigh - 28.5"

Wow, that is horrifying and I can't believe I'm going to publish this!!  But publish it I am, you always hear that admission and acceptance is the first step to recovery and I'm adopting the philosophy...

Back to the resolutions....

Ok, so my New Years resolutions were supposed to be helping me to become thinner, more organised and frugal...
Although planning and executing birthday parties may be fun- stressful, but fun none the less - its hasn't really gotten me any closer to my goal :-(

So lets look at the weight thing.  Eeek!!  I have a few medical what nots that play havoc with body. They make weight gain unbelievably easy and weight loss ..wow, well lets just say it would be easier to get blood from a stone than it is for me to lose weight.  It doesn't help matters that since my car accident in August, I've gained another stone and half!!!!!! *insert sobbing here*

I really need to do something about this, not just for my health, it's my 10th wedding anniversary in a few months and we're celebrating in Egypt and worse still, I'm going to see the The Rocky Horror Picture Show in a few weeks!!  For the benefit of those why may have lived under a rock for the last 30 odd years and don't know what RHPS is, this is a picture of me as we we're heading out to a show in either '07 or '08.  I thought I looked pretty horrific then but I'm positively Bond girl-esque in comparison to now!!  Needless to say I need a miracle cure and I need it YESTERDAY!!!!!

Thanks to my medical what nots, the basic 'eat less, move more' philosophy just does not work for me.  After slogging my guts out at gym for 2-3 hrs a day, 5 days a week for 6 wks and losing only a measly 2 lbs, my soul was so crushed I decided to never go again...of course, I didn't stick to that and have joined gyms since, worked my ass off with no results and quit again so many times so I really need to try something else...but what??  I've joined Weight Watchers loads of times, struggled to work out the whole points malarkey ..lost a whopping 5lbs each time over a period of weeks and then hit a brick wall and stop losing weight no matter how strictly I stick to the regime.  So what's next??

I've been scouring t'internet looking for inspiration and am frankly coming up short....even looking at sites that are dedicated to people with the same what nots as me aren't helping much.  I already take the meds they recommend to regulate insulin resistance etc but without the promised results.  The only thing I can think of to try next is a VLCD - Very Low Calorie Diet.  You know the ones, meal replacement shakes and soups.  I have mixed feelings about these products, on 1 hand you're pretty much starving yourself and forcing your body into ketosis - not good for someone with insulin issues (not diabetes) but at the same time, they are packed full of vitamins and minerals, synthetic maybe, but vitamins all the same which is more than my current, obscenely limited vegetarian diet at the minute!!

I've looked at lots of them and have partially decided to try the 28 day Rosemary Conley Solo Slim plan as it involves real(ish) food that is delivered to your door, but it only seems to provide for 2 meals a day - breakfast and dinner so I don't quite get what I'm meant to do with all the cheese (they send 4 blocks of her own low fat cheese?!) Has anyone tried this one before?  What does it entail and how did you do?
